Farmhouse Recipe: Iron Skillet Peach Crisp

You’re all peaches, so enjoy a crisp!

Ingredients for topping:

1 cup all-purpose flour

2/3 cup (packed) brown sugar

1/2 teaspoon salt

1/2 cup (1 stick) chilled unsalted butter, cut into pieces

Ingredients for filling:

1 1/2 cups roasted pecans (I used almonds!)

2 tablespoons unsalted butter, room temperature

2 1/4 pounds peaches

1/3 cup (packed) brown sugar

1/4 cup granulated sugar

3 tablespoons fresh lemon juice

1/2 teaspoon salt

To prepare:

Topping:
Whisk flour, salt and brown sugar in a medium bowl. Rub in chunks of butter with your fingers until chunks form and no dry spots are left.

Assembly:
Preheat oven to 350 degrees F. Smear bottom and sides of a 10” cast-iron skillet with butter. Toss pecans, peaches, brown sugar, granulated sugar, salt and lemon juice in a large bowl. Transfer to skillet and top by crumbling topping in large pieces over the filling. Bake crisp until topping is golden brown and juices are thick and bubbling around the edges (25 to 35 minutes). Let cool for a bit, but serve warm with a generous scoop of your favorite ice cream (we love Luna and Larry’s “Vanilla Island” made with coconut milk — currently stocked in the freezer section!)

Sophie’s comments: Have you tried the organic peaches Farmhouse has in right now? That’s all the indication you need to know how good this is. A 10” pan full wasn’t enough for me. If the peaches are too hard, keep them in a paper bag for a day or two — the anticipation will make that first bite even sweeter.
