As promised… here are the recipes from the Community Dinner! First up… Ginger Lentil Salad!
Ingredients:
8 ounces (1 cup) of yellow lentils
1 pint of water
1 grated carrot
1 finely chopped onion
2 crushed cloves of garlic
2 tablespoons of freshly squeezed lime juice
1 tablespoon of olive oil
1 tablespoon of crushed coriander seeds
1-inch piece of ginger, peeled & chopped
Black pepper
Freshly chopped coriander to garnish
Directions:
Cook the lentils in simmering water until softened.. Add carrot and simmer for another 5 minutes.
Drain the lentils, transfer to a large bowl and set aside to cool. In the same pan, heat the olive oil and fry the onion, garlic, ginger, and coriander seeds.
Add the onion mixture to the lentils and stir well.
Mix in the remaining ingredients and season.
Serve warm or leave to cool and then serve. Garnish with the freshly chopped coriander.
